Job Description
A fast paced, FSA accredited, successful family run, wholesale bakery serving the needs of the retail, food service and hospitality industry as well as regional and national distributors in South Africa. We specialise in a range of artisan breads, rolls and buns, brioche, croissants and Danish pastries, doughnuts as well as a range of small confectionery products. Our unique range of thaw and serve, parbaked and convenience products aim to make operations simple for the end user whilst still delivering a high quality, consistent product. Duties and Responsibilities:
• Accurately measure and scale ingredients for rolls and basic dough recipes.
• Plan and prepare dough mixes according to the production schedule and recipe specs.
• Make sure enough trolleys are available to avoid delays.
• Mix dough in the correct order and follow the right procedures every time.
• Keep mixing consistent to produce quality products and avoid waste.
• Help meet baking targets as part of the production team.
• Adjust mixing based on ingredient changes, especially when allergens are involved.
• Watch and manage mixing conditions like flour quality, room and water temperature.
• Understand how to shape and process different rolls (e.g., hotdog, hamburger, Portuguese).
• Do basic calculations for mixing and scaling.
• Read and follow instructions from production sheets.
• Fill out production paperwork correctly.
• Follow all Level 1 baking procedures and safety rules.
• Understand and apply quality checks, especially for allergen control.
• Handle multiple basic baking tasks confidently and efficiently.
Minimum Requirements:
• Matric or any equivalent qualification
• Relevant Industry Experience
• Experience as Baker
